Super Easy Recipes

The first is just a hamburger casserole…

Here’s what you need:  about 1 lb ground beef, 1 small onion, 2 cans of sliced new potatoes, 1 or 2 cans of whole kernel corn (depending on how much you like), 1 can of tomato juice or 1 can of tomato soup (if you use the soup mix with about 1/2 can of water), one pkg shredded cheddar cheese.

Here’s what you do…chop onion and mix with ground beef while browning, drain grease.  In a 9 x 13 dish, arrange sliced new potatoes on bottom, cover with corn, sprinkle ground beef/onions on top of corn, pour tomato juice over all and then cover top with cheese.  Bake at 350 until cheese is melted and everything is warmed through.  Then enjoy!!!!

Now the chicken pasta…

What you will need…Olive Oil or cooking spray, garlic salt, 1 small onion (chopped), sliced mushrooms (not canned), green pepper, red pepper, yellow pepper (chopped/sliced….you don’t have to use all 3), squash (sliced thin), 1 large can of chicken in water (drained), freshgrated parm. cheese, and of course some kind of pasta (whatever you like).

Here’s what you do…Saute all veggies in olive oil or cooking spray until tender but still a little crispy.  While cooking, add garlic salt to taste.  Toward the end of cooking veggies, add drained chicken and kinda mash up with fork to separate.  Continue cooking until chicken is warmed through.  Cook pasta as directed and drain.  Add EVERYTHING into large bowl and mix together with some butter.  Top with freshly grated parm. cheese (as much as you like).  Eat and enjoy.

  4. I love pasta!!! Actually, pasta should be a food group all to itself in my book (LOL!). I will definitely have to give it a try!
